Despite their name, these are most likely not like any amaretti you ever tasted.This is because the "Amaretti di Caposele" are not produced with almonds, but with hazelnuts from the woods surrounding Caposele.This is a unique variety of product, only produced in Caposele, and with a special, delicate, sweet taste.

Soppressata di Caposele

"Soppressata di Caposele"

"Soppressata" is a name used for many of those hand-made salami, throughout Italy, with a medium level of seasoning, typically much bigger than the salami you are probably used to (up to 20/30 cms in diameter) and with a rougher texture of the minced meat.The Soppressata from Caposele is unique in that only (pork) meat from local farms is used, and the savouring and ripening procedure still conducted as per the tradition, in the mounts and valleys of the area.

A typical product from the thousands of renown olive trees in Irpinia.This aromatic olive oil comes from the area of the so-called "Alto Sele", being close to the river Sele and also within the municipality of Caposele.The many, little producers have created a local association for the production of thi special olive oil - the A.I.P.O. (Associazione Irpina Produttori Olivicoli).Mildly fruity, with notes of green olive tree leaves and herbs.
